Summertime Chicken Citrus Salad
This is a fresh easy salad featuring chicken, avocado, mandarins, crunchy toppings and a delicious lemon vinaigrette. The vinaigrette alone is yummy enough to use on everything. This one wont disappoint!
Preheat oven to 425 F.
Mix the vinaigrette ingredients together and pour 3/4ths of it into a container or ziploc bag. Add the chicken and allow to marinate for at least 30 minutes.
Place the marinated chicken breasts in a baking dish and bake for 20-25 minutes until cooked through.
Shred the chicken. Then in a large bowl, toss all the ingredients together. Drizzle the remaining lemon vinaigrette on top.

The lemon vinaigrette will last up to a week in the fridge in a sealed container. Remember to shake or stir before using to redistribute the ingredients.
