Summertime Chicken Citrus Salad

This is a fresh easy salad featuring chicken, avocado, mandarins, crunchy toppings and a delicious lemon vinaigrette. The vinaigrette alone is yummy enough to use on everything.  This one wont disappoint! 



Lemon Vinaigrette


  1. Preheat oven to 425 F.
  2. Mix the vinaigrette ingredients together and pour 3/4ths of it into a container or ziploc bag. Add the chicken and allow to marinate for at least 30 minutes.
  3. Place the marinated chicken breasts in a baking dish and bake for 20-25 minutes until cooked through.
  4. Shred the chicken.  Then in a large bowl, toss all the ingredients together. Drizzle the remaining lemon vinaigrette on top.

The lemon vinaigrette will last up to a week in the fridge in a sealed container.   Remember to shake or stir before using to redistribute the ingredients.
