  • 1 small onion (white)
  • 4 garlic (cloves)
  • 1 diced green chilies (4oz can)
  • 4 chipotles in adobo sauce
  • 2 tablespoons adobo sauce
  • 1/4 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano (heaping)
  • 1 teaspoon salt & pepper (each)
  • 1/4 teaspoon ground cloves
  • Meat & Toppings
  • 2 tablespoons olive oil
  • 3 pounds boneless beef roast
  • 3 bay leaves
  • corn tortillas
  • lime juice
  • cilantro (chopped)
  • red onions (diced)
  • 1 avocado (sliced)
Instructions
  1. Use a blender or food processor, add puree ingredients, & process on high speed until smooth; set aside.
  2. Slow Cooker Directions: Sear the beef in a large skillet & then transfer to your slow cooker. Add the puree to the beef & add the bay leaves, stir to combine, close lid, and cook for about 4 to 5 hours on High or about 7 to 8 hours on Low. When done, discard bay leaves, shred the meat with 2 forks, and allow it to sit in the juices for about 15 minutes before serving so it soaks up even more flavor.
  3. Serve on warmed tortillas and add toppings.
