Description

These are easy and delicious! They can be served for a snack, or a light meal. You can even quarter them up and serve them as an appetizer!

Ingredients
  • 4 Portobello mushrooms
  • 1/2 cup prepared pesto
  • 1 roma tomato (thinly sliced)
  • 1 cup part skim mozzarella cheese (shredded)
  • 4 fresh basil leaves (thinly sliced)
Instructions
  1. Preheat oven to 400°. 

  2. Remove and discard stems and gills from mushrooms. Place mushrooms, stem side up, on a greased baking sheet. 

  3. Spoon pesto over mushrooms. Top with tomato slices and sprinkle with cheese.

  4. Bake 15-20 minutes or until mushrooms are tender. Sprinkle with basil.
