It looks, smells, and tastes, exactly like guacamole, but it's not! There's a surprise ingredient that is much lower in fat making this an almost guilt-free indulgence! 

  • 16 ounces frozen baby peas
  • 1/2 cup red onion (minced)
  • 1/4 cup cilantro (finely chopped)
  • 2 green onions (minced)
  • 2 cloves garlic (pressed)
  • 1 jalapeno (minced)
  • 1/2 teaspoon cumin
  • 1 tablespoon red wine vinegar
  • 1 large tomato (diced)
  • zest of 1 lime
  • salt and freshly ground pepper (to taste)
  1. Drop frozen peas in boiling water, cook for 1 minute, then drain.  

  2. Rinse the peas with cold water and let dry. 

  3. Puree peas well in food processor. 

  4. Remove to a bowl and stir in the remaining ingredients.

  5. Chill and enjoy with your favorite chip, cracker or veg!
