We've all seen Cup-o-Noodles. You can't beat the convenience. If only it was healthy! Or tasted good. This is a recipe for a breakfast version that you can meal prep for days at a time with ease!
Add 1/4 c meat, potato, and cheese to each jar. Top with vegetables or herbs of your choice.
If you plan to use 1 egg in each, use half-pint jars, for 2 eggs, use pint jars.
Store these as-is in the fridge for up to 1 week.
When ready to cook your breakfast, add 1 or 2 eggs to the jar and stir well. Microwave for 30 seconds and give the eggs a quick stir.
Microwave an additional 40 seconds if you are using 1 egg or 60 seconds for 2 eggs.
Carefully remove the jar of scrambled eggs from the microwave and enjoy the convenience of your pre-prepped breakfast!
