Blueberry Swirl Ice Cream Sandwiches

Description

This is a delicious ice cream treat your kids will love. It's easy to make at home and a lot lighter in calories and sugar, so you will love it too!

Ingredients

Instructions

  1. Dissolve cornstarch in water in small bowl. Set aside

  2. Heat small saucepan over medium-low heat. Add blueberries and sugar. Cook 3-4 minutes, stirring and mashing blueberries as they cook.

  3. Once blueberries begin to break down, add cornstarch/water mixture. Increase heat to medium and cook 3 minutes.

  4. Remove from heat and let cool completely. If desired, strain blueberries through a mesh strainer to remove skins.

  5. Place yogurt in freezer-safe container. Mix in blueberry sauce.

  6. Line a 9×9 baking Pan with plastic wrap

  7. Line the bottom of the baking dish with graham crackers.

  8. Top with blueberry and yogurt mix and use spatula to spread the mixture evenly over the crackers.

  9. Top with another layer of graham crackers.

  10. Freeze for 4 hours or until yogurt mix has fully set.

  11. Remove from the pan and cut knife to cut into ice cream sandwiches.
