Black Bean and Corn Salad

A colorful and fresh salad you can make with fresh corn from the garden, but it is just as delicious with canned corn.  With black beans, avocado, and the yummy dressing, you will be hooked! 



  1. Drain and rinse the beans and corn then place in a large bowl.
  2. Add the tomato, red pepper, and red onion along with the avocado oil, lime juice, minced garlic and cilantro and season well with sea salt and fresh ground pepper.
  3. Mix thoroughly to combine, then add the diced avocado and gently mix through.
